Ingredients:
- 1 lb ground beef (or ground turkey for a lighter option)
- 1 packet taco seasoning mix
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 bag (9.25 oz) Fritos or Doritos, crushed
- 2 cups shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped green onions
- 1 cup shredded lettuce
- 1 cup sour cream
- Salsa (optional)
- Fresh cilantro, chopped (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir to combine and let it simmer for about 5 minutes.
- Stir in the black beans and corn, and cook for another 2-3 minutes until heated through.
- In a greased 9×13-inch baking dish, spread a layer of half of the crushed Fritos or Doritos.
- Layer the beef mixture evenly over the chips.
- Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
- Add the remaining crushed chips on top of the cheese layer.
- Top with the remaining cheese.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
