Walking Taco Casserole

Ingredients:

  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 bag (9.25 oz) Fritos or Doritos, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • 1 cup shredded lettuce
  • 1 cup sour cream
  • Salsa (optional)
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning mix and water to the skillet. Stir to combine and let it simmer for about 5 minutes.
  4. Stir in the black beans and corn, and cook for another 2-3 minutes until heated through.
  5. In a greased 9×13-inch baking dish, spread a layer of half of the crushed Fritos or Doritos.
  6. Layer the beef mixture evenly over the chips.
  7. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  8. Add the remaining crushed chips on top of the cheese layer.
  9. Top with the remaining cheese.
  10. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven and let it cool for a few minutes.
