Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese (or feta cheese as a substitute)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Prepare the Corn:
    • Preheat your grill to medium-high heat.
    • Place the corn directly on the grill grates and cook, turning occasionally, until the corn is charred and cooked through, about 10-15 minutes. Alternatively, you can boil the corn for 5-7 minutes if you don’t have a grill.
  2. Make the Sauce:
    • In a small bowl, mix together the mayonnaise, sour cream, and half of the cotija cheese until well combined.
  3. Season the Corn:
    • Once the corn is cooked, remove it from the grill and let it cool slightly.
    • Using a brush or spoon, coat each ear of corn with the mayo-sour cream mixture.
  4. Add Toppings:
    • Sprinkle the chili powder, smoked paprika, and remaining cotija cheese evenly over the corn.
    • Season with salt and pepper to taste.
  5. Garnish:
    • Sprinkle chopped cilantro over the corn.
    • Serve with lime wedges on the side for squeezing over the top.

Tips

  • For extra flavor, you can add a pinch of cayenne pepper to the chili powder for a bit more heat.
