- 1 lime, cut into wedges

Instructions
- Prepare the Corn:
- Preheat your grill to medium-high heat.
- Place the corn directly on the grill grates and cook, turning occasionally, until the corn is charred and cooked through, about 10-15 minutes. Alternatively, you can boil the corn for 5-7 minutes if you don’t have a grill.
- Make the Sauce:
- In a small bowl, mix together the mayonnaise, sour cream, and half of the cotija cheese until well combined.
- Season the Corn:
- Once the corn is cooked, remove it from the grill and let it cool slightly.
- Using a brush or spoon, coat each ear of corn with the mayo-sour cream mixture.
- Add Toppings:
- Sprinkle the chili powder, smoked paprika, and remaining cotija cheese evenly over the corn.
- Season with salt and pepper to taste.
- Garnish:
- Sprinkle chopped cilantro over the corn.
- Serve with lime wedges on the side for squeezing over the top.
