Italian Drunken Noodles

Instructions:

  1. Cook the Pasta: Boil the pasta in salted water according to package instructions. Drain and set aside.
  2. Cook the Sausage: In a large skillet, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through. Remove from skillet and set aside.
  3. Sauté the Vegetables:
  • In the same skillet, add a little more olive oil if needed. Add sliced onions and bell peppers and cook until they begin to soften.
  • Add garlic and cook for another minute until fragrant.
  1. Make the Sauce:
  • Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to cook down by half.
  • Stir in the diced tomatoes and their juices, crushed red pepper flakes, and season with salt and pepper. Simmer for 10 minutes, allowing the flavors to blend.
  1. Combine Everything:
  • Add the cooked sausage back to the skillet along with the cooked pasta. Toss everything together to coat the noodles in the sauce.
  • Add the fresh basil and gently mix.
  1. Serve:
  • Garnish with fresh Italian parsley and extra basil if desired. Serve hot.
