HOMEMADE CHICAGO STYLE DEEP DISH PIZZA

Ingredients

Ingredients:

For the Dough:
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/2 teaspoons sugar
  • 1 1/4 cups warm water (110°F/45°C)
  • 3 1/4 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
For the Filling:
  • 2 tablespoons olive oil
  • 1 pound Italian sausage, casings removed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
For the Sauce:
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon sugar
Optional Toppings:
  • Sliced pepperoni
  • Sliced mushrooms
  • Sliced bell peppers
  • Sliced black olives

Instructions:

  1. Prepare the Dough:
    • In a small bowl, dissolve the yeast and sugar in the warm water. Let it sit for about 5 minutes until it becomes frothy.
    • In a large mixing bowl, combine the flour, cornmeal, and salt. Add the yeast mixture and vegetable oil. Mix until the dough comes together.
    • Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Prepare the Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.
    • Add the chopped onion and minced garlic to the skillet and cook until the onion is softened, about 5 minutes. Remove from heat and set aside.
  3. Prepare the Sauce:
    • In a medium saucepan, combine the crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes (if using), and sugar. Bring to a simmer over medium heat and cook for about 15-20 minutes, stirring occasionally. Remove from heat and set aside.
  4. Assemble the Pizza:
    • Preheat your oven to 425°F (220°C).
    • Grease a 12-inch deep-dish pizza pan or cast-iron skillet with vegetable oil.
    • Punch down the risen dough and roll it out into a large circle, about 14 inches in diameter.
    • Carefully place the dough into the prepared pan, pressing it into the bottom and up the sides.
    • Layer the bottom of the dough with the shredded mozzarella cheese, spreading it evenly.
    • Add the cooked sausage mixture on top of the cheese.
    • Pour the tomato sauce over the sausage, spreading it evenly.
    • Sprinkle the grated Parmesan cheese on top of the sauce.
    • Add any additional toppings as desired.
  5. Bake:
    • Bake the pizza in the preheated oven for about 30-35 minutes, or until the crust is golden brown and the cheese is bubbly.
  6. Serve:
    • Allow the pizza to cool for a few minutes before slicing. Serve hot and enjoy!

Tips:

  • Resting the Dough: Allowing the dough to rise properly ensures a soft and airy crust.
  • Cheese First: Putting the cheese directly on the crust helps create a barrier that prevents the crust from becoming soggy.
  • Preheating: Make sure your oven is fully preheated to ensure even baking.

Enjoy your homemade Chicago-style deep-dish pizza!
