Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente.
- Drain and set aside. Reserve about 1/2 cup of the pasta water for later in case you need to adjust the sauce consistency.
Step 2: Cook the Sausage
- In a large skillet over medium heat, add the olive oil or butter and cook the garlic sausage until it’s browned and cooked through, about 6-8 minutes.
- Remove the sausage from the skillet and set it aside, leaving any flavorful drippings in the pan.
