Instructions:
- Preheat the oven to 350°F (175°C).
- Cook the Beef:
- In a large skillet, brown the ground beef and chopped onion over medium heat until the meat is no longer pink. Drain any excess fat.
- Mix the Ingredients:
- In a large bowl, combine the cooked beef and onion, hash browns, cream of mushroom soup, sour cream, garlic powder, salt, pepper, and half of the shredded cheddar cheese. If using, stir in the frozen mixed vegetables.
- Transfer to Casserole Dish:
- Pour the mixture into a greased 9×13 inch baking dish. Spread it evenly.
- Top with Cheese:
- Sprinkle the remaining cheddar cheese over the top of the casserole.
- Bake:
- Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Serve:
