Chicken Alfredo Lasagna Rolls

Ingredients:

  • 10 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups Alfredo sauce (store-bought or homemade)
  • 1 egg
  • 2 cups fresh spinach, chopped (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Lasagna Noodles:
    • Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a baking sheet to prevent sticking.
  3. Prepare the Filling:
    • In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. If using spinach, add it to the mixture as well. Mix until well combined.
  4. Assemble the Lasagna Rolls:
    • Spread a thin layer of Alfredo sauce on the bottom of a 9×13 inch baking dish.
    • Lay out a lasagna noodle on a clean surface. Spread about 1/4 cup of the chicken and cheese mixture evenly over the noodle. Roll up the noodle from one end to the other and place it seam-side down in the prepared baking dish. Repeat with the remaining noodles and filling.
  5. Top with Alfredo Sauce:
    • Pour the remaining Alfredo sauce over the lasagna rolls, ensuring each roll is well coated. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  6. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  7. Garnish and Serve:
    • Remove the lasagna rolls from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.
