Bread made with pineapple

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup pineapple juice (from the canned pineapple)
  • 1 can (8 ounces) crushed pineapple, drained
  • 1/2 cup chopped nuts (optional, like walnuts or pecans)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon ground nutmeg (optional)

Instructions:

  1. Preheat your oven: Preheat to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking soda, salt, and baking powder. If you’re using cinnamon and nutmeg, add them here as well.
  3. Mix wet ingredients: In a separate bowl, beat the eggs, then add the oil (or melted butter), vanilla extract, and pineapple juice. Stir until well combined.
  4. Combine: Add the wet ingredients to the dry ingredients and mix just until combined. Be careful not to overmix.
  5. Add pineapple and nuts: Gently fold in the crushed pineapple and chopped nuts (if using).
