Apple Cream Cake

Ingredients:

  • For the Cake:
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup sour cream
    • 2 large apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp work well)
  • For the Cream Layer:
    • 1 cup heavy cream
    • 1/4 cup granulated sugar
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 2 tablespoons unsalted butter, melted
    • 2 tablespoons granulated sugar
    • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9-inch round springform pan.
  2. Prepare the Cake Batter:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large bowl, beat the softened butter and sugar together until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, and mix until just combined.
  3. Layer the Cake:
    • Spread half of the cake batter evenly in the prepared pan.
    • Arrange a layer of sliced apples over the batter.
    • Spread the remaining batter over the apples.
  4. Prepare the Cream Layer:
    • In a small bowl, whisk together the heavy cream, sugar, and vanilla extract.
    • Pour this cream mixture evenly over the top layer of cake batter.
  5. Add the Topping:
    • In a small bowl, mix together the melted butter, sugar, and cinnamon.
    • Drizzle or brush this mixture over the top of the cream layer.
  6. Bake the Cake:
    • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
    • If the top begins to brown too quickly, cover the cake loosely with foil.
  7. Cool and Serve:
    • Allow the cake to cool in the pan for 10-15 minutes before removing the springform ring.
    • Serve the cake warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.

This Apple Cream Cake is a delightful combination of tender cake, fresh apples, and a creamy, cinnamon-scented topping. Perfect for dessert or even a special breakfast treat! Enjoy!
