Steak Fajitas Recipe

Ingredients:

  • For the marinade:
  • 1 pound (450g) flank steak or skirt steak
  • 3 tablespoons olive oil
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • For the fajitas:
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers, thinly sliced (use a mix of red, green, and yellow for color)
  • Tortillas (flour or corn)
  • Toppings: sour cream, guacamole, salsa, shredded cheese, cilantro (optional)

Instructions:

  1. Marinate the Steak:
  • In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, smoked paprika, salt, pepper, and cayenne (if using).
  • Place the steak in a resealable plastic bag or shallow dish and pour the marinade over it, making sure it’s fully coated. Marinate in the fridge for at least 30 minutes, but for best flavor, marinate for 1-2 hours or overnight.
  1. Cook the Vegetables:
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced onions and bell peppers and cook, stirring occasionally, for 6-8 minutes or until the vegetables are softened and slightly charred. Remove the veggies from the skillet and set aside.
  1. Cook the Steak:
  • In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Remove the steak from the marinade and shake off any excess. Cook the steak for about 4-5 minutes on each side (depending on thickness) for medium-rare, or cook to your desired level of doneness.
  • Remove the steak from the skillet and let it rest for 5-10 minutes before slicing thinly against the grain.
  1. Assemble the Fajitas:
  • Warm the tortillas in a dry skillet or microwave. Serve the sliced steak with the cooked onions and bell peppers, along with your favorite toppings such as sour cream, guacamole, salsa, shredded cheese, and cilantro.
  1. Serve and Enjoy:
  • Build your fajitas by placing the steak, veggies, and toppings in the tortilla, roll it up, and enjoy!

Tips:

  • You can also grill the steak for extra flavor.
  • If you want more heat, add some sliced jalapeños to the vegetables while cooking.

These Steak Fajitas are perfect for a weeknight dinner, family gathering, or even a taco night!
