Apple Fritter Bites 🍏🍩

Ingredients:

  • For the Apple Fritter Bites:
    • 2 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg (optional)
    • 2 large eggs
    • 3/4 cup milk
    • 2 teaspoons vanilla extract
    • 2 cups peeled and diced apples (Granny Smith or Honeycrisp work well)
    • 1 tablespoon butter (melted)
    • Vegetable oil for frying
  • For the Glaze:
    • 1 cup powdered sugar
    • 2-3 tablespoons milk
    • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the dough:
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. In another bowl, beat the eggs, then add the milk, vanilla extract, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples.
  2. Heat the oil:
In a large, deep pot or deep fryer, heat about 2 inches of vegetable oil to 350Β°F (175Β°C).
  3. Fry the fritter bites:
Using a small cookie scoop or a tablespoon, carefully drop spoonfuls of the batter into the hot oil, being sure not to overcrowd the pot. Fry the fritters for about 2-3 minutes per side, or until golden brown and cooked through. Remove them with a slotted spoon and drain on paper towels.
  4. Make the glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  5. Glaze the fritters:
While the fritters are still warm, dip them in the glaze or drizzle the glaze over the top. Place them on a wire rack to allow the glaze to set.
  6. Serve:
Enjoy the apple fritter bites warm! They’re best when fresh, but you can store any leftovers in an airtight container for a day or two.

These little bites are crispy on the outside, soft on the inside, and bursting with apple flavor. They make a perfect treat for any time of day!
